Undhiyu Recipe: The Delicious Gujarati Vegetable Curry

Undhiyu is a popular vegetable curry from the state of Gujarat, India. It is a flavorful and aromatic dish that is made with a variety of vegetables and spices. Undhiyu is traditionally cooked in a clay pot, called a matla, which gives it a unique taste and aroma.

Undhiyu is a winter specialty in Gujarat and is made during festivals like Uttarayan and Navratri. The dish is a perfect combination of sweet and savory flavors, and it is best served with puri, a type of fried Indian bread.

Undhiyu Recipe

Ingredients:

For the Masala:

  • 1 cup fresh grated coconut
  • 2 tbsp. sesame seeds
  • 2 tbsp. peanuts
  • 1 tsp. coriander seeds
  • 1 tsp. cumin seeds
  • 1 tsp. fennel seeds
  • 1 tsp. mustard seeds
  • 1 tsp. turmeric powder
  • 2 tbsp. jaggery or brown sugar
  • 1 tbsp. lemon juice
  • 1 tbsp. ginger paste
  • 1 tbsp. garlic paste
  • 2-3 green chilies, chopped
  • Salt to taste

For the Curry:

  • 2 cups surti papdi (fresh pigeon peas), strings removed and chopped
  • 1 cup sweet potato, peeled and cubed
  • 1 cup yam, peeled and cubed
  • 1 cup green beans, chopped
  • 1 cup eggplant, cubed
  • 1 cup raw banana, cubed
  • 1 cup potato, cubed
  • 1 cup carrot, cubed
  • 1 cup cauliflower florets
  • 1 cup fresh methi (fenugreek) leaves, chopped
  • 1/2 cup oil
  • 2 tbsp. ginger, chopped
  • 2 tbsp. garlic, chopped
  • 2-3 green chilies, chopped
  • 1 tsp. ajwain (carom seeds)
  • 1 tsp. hing (asafoetida)
  • Salt to taste

Method Undhiyu Recipe:

  1. To make the masala, roast the coconut, sesame seeds, peanuts, coriander seeds, cumin seeds, fennel seeds, and mustard seeds in a pan until they turn golden brown.
  2. Cool the roasted spices and grind them into a fine powder.
  3. Add turmeric powder, jaggery or brown sugar, lemon juice, ginger paste, garlic paste, green chilies, and salt to the powder and mix well. Set aside.
  4. In a large bowl, mix together the surti papdi, sweet potato, yam, green beans, eggplant, raw banana, potato, carrot, cauliflower, and fresh methi leaves.
  5. Add the masala to the bowl of vegetables and mix well.
  6. In a deep pan, heat the oil and add ginger, garlic, green chilies, ajwain, and hing.
  7. Add the vegetable masala mixture to the pan and mix well.
  8. Cover the pan with a lid and let the vegetables cook for about 30-40 minutes on low heat, stirring occasionally.
  9. Once the vegetables are cooked, remove the lid and let the curry cook for a few more minutes to thicken.
  10. Serve hot with puri or paratha.
