Dhokla Recipe: A Classic Gujarati Snack That’s Easy to Make

Dhokla is a popular savory snack from the western Indian state of Gujarat. It is a light and fluffy steamed cake made from gram flour (besan) and flavored with spices and herbs. Dhokla is a healthy and nutritious snack that is low in fat and calories, making it an excellent option for those who are health-conscious.

Dhokla is typically served as a snack with green chutney or tamarind chutney and is a favorite among Gujaratis. It is a staple at most Gujarati households and is also popular across India and in other parts of the world.

Dhokla Recipe:

Ingredients:

  • 1 cup gram flour (besan)
  • 1/2 cup plain yogurt (dahi)
  • 1/4 cup semolina (sooji)
  • 1/4 cup water
  • 1 tbsp. ginger-green chili paste
  • 1 tsp. lemon juice
  • 1 tsp. sugar
  • 1 tsp. fruit salt (eno)
  • Salt to taste
  • Oil for greasing

For Tempering:

  • 1 tbsp. oil
  • 1 tsp. mustard seeds (rai)
  • 1 tsp. sesame seeds (til)
  • 1/2 tsp. asafoetida (hing)
  • 2-3 green chilies, slit
  • A few curry leaves
  • 1/4 cup water
  • 2 tbsp. chopped coriander leaves

Method:

  1. In a mixing bowl, add gram flour, plain yogurt, semolina, water, ginger-green chili paste, lemon juice, sugar, and salt. Mix well to form a smooth batter.
  2. Cover the bowl and let the batter rest for 15-20 minutes.
  3. Grease a steaming plate or a dhokla maker with oil.
  4. Add the fruit salt to the batter and mix well. The batter will start to bubble up and become frothy.
  5. Pour the batter into the greased plate and steam for 15-20 minutes or until a toothpick inserted comes out clean.
  6. Once the dhokla is cooked, remove it from the steamer and let it cool for a few minutes.
  7. Cut the dhokla into bite-sized pieces and keep aside.
  8. In a small pan, heat oil and add mustard seeds, sesame seeds, asafoetida, green chilies, and curry leaves.
  9. Once the seeds start to splutter, add water and let it come to a boil.
  10. Pour the tempering over the dhokla and garnish with chopped coriander leaves.
  11. Serve the dhokla with green chutney or tamarind chutney.

Dhokla is a delicious and healthy snack that can be made easily at home. The recipe is simple and requires only a few ingredients that are easily available in any Indian kitchen. The dish is steamed, making it low in calories and fat, and it can be customized with different spices and herbs to suit individual tastes.
