Bhogi Bhaji, also known as Bhogichi Bhaji, is a traditional Maharashtrian dish prepared during the festival of Bhogi, which marks the arrival of longer days in mid-January. This hearty winter vegetable stew is packed with seasonal vegetables, warming spices, and a rich mix of sesame seeds and ground peanuts. Here’s a simple yet authentic guide to making this flavorful dish.

Bhogi Bhaji Ingredients

Below is the list of ingredients needed to prepare Bhogi Bhaji:

Spices and Flavoring:

  • 2 tbsp vegetable or peanut oil
  • 1 tsp black or brown mustard seeds
  • 1 tsp cumin seeds
  • 2 tbsp white sesame seeds
  • ½ tsp asafoetida powder
  • ¾ tsp turmeric powder
  • 1½ tsp goda masala (substitute with garam masala if unavailable)
  • Red chili powder (optional, adjust to taste)

Vegetables:

  • 4-5 medium red potatoes (cut into ¾-inch cubes)
  • 2-3 handfuls of flat green beans (cut into diamonds)
  • 2 large carrots (cubed)
  • 1 cup shelled peas or toor dal beans
  • 8 baby eggplants (cubed)

Additional Ingredients:

  • 2 tbsp water
  • 1½ tsp table salt (adjust to taste)
  • 3 tbsp ground peanuts
  • Fresh grated coconut (for garnish)
  • Chopped cilantro (for garnish)
  • Jaggery or sugar (optional, for a hint of sweetness)

Step-by-Step Recipe

1. Prepare the Vegetables:

  • Wash and chop the vegetables into uniform sizes to ensure even cooking.
  • Remove the strings from green beans, scrub and peel carrots and potatoes, and dice baby eggplants.

2. Start the Tempering (Tadka):

  • Heat oil in a heavy-bottomed pan on medium heat.
  • Add mustard seeds and let them splutter.
  • Add cumin seeds, sesame seeds, and asafoetida powder. Sauté for about a minute.
  • Stir in turmeric powder and chopped green chilies. Let them cook for a couple of minutes until aromatic.

3. Cook the Vegetables:

  • Add potatoes to the pan first since they take longer to cook. Toss to coat them with the spices.
  • Add salt and goda masala, mixing well. Cover and let cook for 5-7 minutes.
  • Gradually add other vegetables in stages: first beans, then carrots, followed by peas or toor dal, and finally the eggplants.

4. Add Peanuts and Final Touches:

  • Sprinkle ground peanuts over the vegetable mixture.
  • Adjust the consistency by adding water if required (keep it dry if serving with flatbread or thicker if pairing with rice).
  • Optional: Add a teaspoon of jaggery or sugar for a balanced flavor.

5. Garnish and Serve:

  • Turn off the heat and garnish with freshly grated coconut and chopped cilantro.
  • Serve hot with Bhakri (Maharashtrian flatbread), Roti, or Chapati, along with a dollop of ghee.
